I'd like to grow my hair out like Jim from 'The Office'...?

Is there anything I can use to give it more of a firm, soft, straight look once its that long? Something kind of like a gel for longer hair so it looks nicer then just towel drying.

Blow dry it. If you're a male, brush off the stigma that doing anything with a hair appliance is femme. Use a good conditioner in the shower before, and apply a serum to protect and smooth of frizzies while you're blowdrying. Only use gel if you want waves, I wouldn't recommend it when trying for straight hair. Gel also gives that wet, crunchy look. Mousse would work to hold the style if you apply it while your hair is still wet or damp, and are blowdrying it too. If you want a messy, piecy look after it's dry you could use a wax or something like Bedhead goo.

a cream I think would hold better-if you put gel in it it tends to be crunchy-and greasy looking. paul mitchell's quick slip is good, or if you have wavyish hair and want it to stay that way they have a product called round trip. It kinda just smooths and defines what you have without looking like it's done
